I recently attended a wonderful event at The International Culinary Center devoted to Lambrusco. It was a day of wine tasting combined with food pairings with dishes prepared by some amazing chefs. This squab with little potato gnocchi by Valentino Marcattilii paired with Lambrusco di Modena Grasparossa di Castelvetro DOP, OPERA02, was my favorite combination of the day.
At the end of the day I got to meet Chef Michael White—I was super excited!
