I recently attended a wonderful event at The International Culinary Center devoted to Lambrusco. This squab with little potato gnocchi by Valentino Marcattilii paired with Lambrusco di Modena Grasparossa di Castelvetro DOP, OPERA02, was my favorite combination of the day.
