Early Fall 8 & $20: Lamb-Stuffed Eggplant



My latest 8 & $20 is up this week at WineSpectator.com: Lamb-Stuffed Eggplant. This recipe makes good use of veggies in the market now and come in it's own convenient package.

Since it was easy to store and reheat the leftovers as they were, we ended up keeping round 2 as was.
If you want to change things up, this would be another good dish to transform into bowl by cutting it all up and mixing it grains, or serve in pita pockets for sandwiches.
