I had a new 8 & $20 go up on WineSpectator.com earlier this week: Roasted Chicken Thighs With Broccoli. This incredibly versatile dish is a staple in our repertoire at home. It comes together pretty quickly, which makes it perfect for a weeknight. Plus, because it combines bright, fresh notes with the comforting flavors you get from roasting, it's a recipe that can straddle the seasons.
This is also one of my go-to recipes for last minute guests, because there are endless ways to vary it up. Swap the broccoli for cauliflower or another veg. Use your favorite spices instead of lemon and herbs. It's a blueprint--put your spin on it!
