8 & $20: Ham Steaks with Peach-Tomato Succotash, plus Leftover Makeovers

I’ve been traveling a bit recently, so I’m a little late to share my latest 8 & $20: Ham Steaks with Peach-Tomato Succotash. It’s easy, quick, and makes use of some of the best of summer produce.

The succotash also lends itself to a bunch of leftover makeovers.  It works both cold and hot, so it’s particularly versatile.

Warm it up and toss it on some pasta with a little Parmesan cheese. If you have leftover ham steaks, cube those up and throw that on as well.


Or, layer it on a bed of greens with a little cheese and the protein of your choice for a hearty salad–here I used leftover roasted pork, but use up whatever you have around.


It also makes a great filling for a wrap. Make a big of the succotash and use it a bunch of different ways.
